Free images of Vegetables - Eddoes

Colocasia antiquorium, commonly known as an "Eddoe" or "Eddo", is a tropical, circular root vegetable that is closely related to Taro.  Looking like hairy, striped potatoes, this vegetable was developed as a crop in China and Japan and then introduced from there to the West Indies.  This veggie is very popular in the Caribbean.  

Eddoes are used as an alternative to potatoes, sweet potatoes and yams.  They can be prepared and eaten in the same ways as potatoes.  They can be boiled, baked, chipped or roasted.  It is recommended that you boil the eddoes prior to peeling them.  Mash them with milk and butter and enjoy their sweet, subtle, nutty flavour.
