Quinoa, pronounced "keen-wah" is a type of goosefoot [Chenopodium] that is a grain-like crop grown for its edible seeds.  It is not a true cereal or grain.  This plant is closely related to beetroots, spinach and tumbleweeds.

After harvesting, the coating from the seeds needs to be removed.  Seeds are cooked the same way as rice.

The plant grows to be 1-2 m high with a woody green, red or purple central stem.  The flowers are self-fertilizing.  Fruits are 2 mm and white, red or black depending upon the cultivar.

Quinoa's popularity has soared recently due to its high fiber content and it being a complete protein.

Did you know....

that 2013 was the United Nations' International Year of Quinoa!?

To prepare this protein-rich grain, rinse well and boil 1 part quinoa in 2 parts water with a pinch of salt.  Once boiling, reduce and simmer covered for 15 minutes.  Let stand for 5 minutes, fluff and eat.

This South American grain is great in salads, as part of a stir-fry or by itself served with butter or olive oil.

Rice & Grains

Did you know...

that rice is the seed of certain species of grass?  It is a cereal grain that is a staple in the diet of many cultures.

Grains are small, hard, dry seeds from grain crops. They include things like cereals - wheat, rye, oats and legumes such as beans and soybeans.

Did you know...

that food items such as grits, cereals, tortillas, bread, pasta, oatmeal and breakfast cereals are all made from grains?

Whole grains = grains that retain the entire grain kernel.  Examples are whole wheat, Oatmeal, brown rice, popcorn.

Refined grains = Have been through a process called "milling" to remove the germ and bran to give the grain a finer texture.  Examples include:  white rice, white flour, white bread.

Did you know...

refining wheat removes half or more of a wide range of vitamins, minerals and other nutrients including 78% of its fiber.
