What
are root vegetables?
Root
vegetables are the roots, or any underground part, of plants that we eat
as vegetables. Although there are differences regarding what part
of a plant are the true roots versus non-roots like tubers, rhyzomes,
corms and bulbs, for our purposes, we will use the culinary definition
and apply the term "root vegetable" to all these types of
roots. Examples
of roots vegetables include: garlic, carrots, parsnips, onions,
beets, sweet potatoes, turnips, beets, etc.
Cassava
Manihot
esculenta,
is commonly known as the "Cassava, Brazilian
Arrowroot, Manioc" and "Tapioca". It is
a woody shrub native to South America that is cultivated in tropical and
subtropical regions for its edible starchy tuberous roots.
Don't
be confused, although some people refer to this root as a
"yucca", cassava is quite different from the Yucca in the Asparagacea
family.
Cassava
may be dried to make a powdery or pearly extract and is called tapioca.

Turnip
Brassica
rapa, commonly known as the "Turnip" or "White
Turnip" is another root vegetable grown for its large
taproot.
Did
you know... that
the part of the turnip that grown above the ground, when exposed to
sunlight, turns purple, red, or greenish in colour? The interior of
the root is completely white.

are the fleshy edible part of a plant that contains its seeds. Most
people think that rhubarb is a fruit, but technically, rhubarb is a
vegetable.
Vegetables
are plants that are cultivated for their edible parts which include
roots, stems, leaves or flowers. Therefore, a zucchini is
botanically a fruit, but is used as a vegetable.
