Seafood - either you love it or you don't!  I love it!  

The term "seafood" means anything eaten from the sea and typically includes fish, molluscs (clams, sea snails, cephalopods), crustaceans (invertebrates with hard external crusts with segmented bodies like shrimp, crab, lobster & krill) and other things such as mammals (whales), turtles jellyfish, etc.  Don't forget, seaweeds and microalgae are edible sea plants and part of the term "seafood".

Hard-Shell clams (Mercenaria mercenaria) are commonly known as "Littlenecks, Topnecks, Cherrystones" and "Chowders".

Conch, also known as "whelk", are a type of sea snail.  While oysters and scallops have have two shells that open and close, conch shells are all one piece.  

Conches have a mild, sweet flavour and are commonly used to make conch fritters or conch chowder.

Dungeness Crab get their name from the port of Dungeness in Washington.  They inhabit the waters of the west coast of North America.

Growing to about 20-25 cm, this very popular seafood is loved for its sweet and tender flesh, but only about one-quarter of the crab's weight is meat.

Razor Clams

Razor clams are long, narrow saltwater clams with a long, thin shell.  You can find them vertically planted in the sand.  The name comes from the fact that they look like a closed straight razor.  

There are several genera of Razor Clams in the Ensis, Siliqua and Solen genera.  The ones photographed below might be Atlantic Jackknife Clam, Ensis directus; Razor Shell, Ensis arcuatus; or the Gould's Razor Shell, Solen strictus.  Photographed in a fish market.

Typical cooking methods are to coat the clams in breadcrumbs and deep fry them.
