Did you know....

Soybean (US spelling) or Soya Bean (UK spelling) are a type of legume that is native to East Asia.  It is a widely grown bean due to its many uses and has been an important protein source in the Orient for over five thousand years!  Since the early twentieth century, soybeans have been introduced to the Western world and are here called the "Golden Bean" or "Miracle Bean".  The UN Food and Agricultural Organization classifies the Soybean as an oilseed.

Planting soybeans produces much more protein per acre than most other land uses including growing other crops or raising cattle.

From soybeans one gets:  animal feed, soy vegetable oil, soy milk, tofu, soy sauce, fermented bean paste, natto and tempeh.  Cooked soybeans can also be used in soups, sauces and stews.  The oil can also be used in industrial uses.

Soybean plants vary in height ranging from 1/2 to 6 1/2 feet.  Notice that the pods, stems and leaves are covered with fine hairs.  Leaves fall off the plant before the seeds mature.

Soybean fruits are hairy pods that grow in clusters of 3-5.  The pods are 1-3 inches in length and usually have 2-4 seeds that are 5-11 mm in diameter.  As soybeans mature in the pod, they ripen into hard, dry beans.  Beans come in a variety of colours including black, brown, blue, yellow, green and mottled.

Fruits &
Vegetables

Fruits are the fleshy edible part of a plant that contains its seeds. Most people think that rhubarb is a fruit, but technically, rhubarb is a vegetable.

Vegetables are plants that are cultivated for their edible parts which include roots, stems, leaves or flowers.  Therefore, a zucchini is botanically a fruit, but is used as a vegetable.
