  ►  What’s the difference between a spice and an herb?

Spices come from a variety of sources including buds (cloves, saffron), berries (black pepper), dried seeds (fennel, mustard, sesame, poppy), fruit (all spice, paprika), roots & rhizomes (ginger, onion, garlic, turmeric), tree bark (cassia, cinnamon), or some other vegetative substance.  They are used for flavouring, colouring or preserving foods in addition to having medicinal, ritual or aromatic uses.  Adding some spice to your cooking will result in some delicious dishes filled with flavour.  In addition, spices contain antioxidants and have antimicrobial properties.  

Spices may be purchased fresh or dried.  Dried spices may also be pre-ground.

►  Did you know....

The flavour of spices deteriorate?  Your spices are best stored in airtight containers away from heat, moisture and light.  How long will my spice purchase last?  According to a leading spice retailer, Club House, your spice purchases will deliver the best flavour if used within the following guidelines:  Ground spices – 2 to 3 years; whole spices – 4 years; herbs – 1 to 3 years.  All Club House pure extracts are best used within 4 years except for pure vanilla which has an unlimited shelf life !

Herbs, on the other hand, come from the leafy part of a green plant.  They can be used for flavouring or as a garnish for decoration.

►  Did you also know....

that some plants are both herbs and spices!?  The leaves of Coriandrum sativum produce the herb Cilantro.  The plant’s seeds, however,  give us the spice Coriander.

that while pepper is a spice, but salt is NOT?  Salt is a mineral!

 

Cinnamon

 

Cinnamon is one of the most commonly used spice.  Who doesn’t love the scent of a warm apple pie with cinnamon or sticky cinnamon buns?  Many would be surprised to know, however, that this spice comes from the bark of trees in the Cinnamomum genus in the Lauraceae family.

The images below show the bark from the cinnamon tree in its raw form as sticks.  Sticks are used for flavouring foods or stirring beverages while adding flavour.  The ground, powdered form of cinnamon is the most commonly used.
