Chinese Bitter Gourd (Melon)

Momordica charantia, commonly known as the "Chinese Bitter Melon, Chinese Bitter Cucumber", or just "Bitter Melon" is an edible fruit pod of a climbing vine, in the Cucurbitaceae family.  It is a cucumber-shaped plant, green and somewhat warty looking.  It's name comes from its bitter taste and it is known to be amongst the most bitter of all culinary vegetables.  Bitter Melon is the main ingredient in some Asian cuisines.

Although called the Chinese Bitter Melon, this fruit originated on the subcontinent of India and was introduced to China in the 14th century.

Other names:  Bitter Gourd, Balsam-pear, Goya and Karela.

Opo Squash

Lagenaria siceraria is commonly known as the “Opo Squash, Long Melon” or “Bottle Gourd”.

Opo squash is a long, green vegetable that varies in colour from light green to chartreuse. Strangely, an Opo is sometimes referred to as a melon!?   The interior flesh is white.

The Opo may be harvested when it is 10 – 12 inches long and used as a vegetable.  Many people think that this squash tastes similar to a zucchini or a blend of squash and cucumber. All of the vegetable can be eaten – skin, seeds and stems.  It is a popular ingredient in Asian cooking.

When harvested mature, the squash are dried and used as containers.  Rounder varieties are called “Calabash Gourds” and come in a variety of shapes. While called “calabashes”, true calabashes are the fruit of the Calabash tree, while the gourd variety – Opo - grown on vines.

Spaghetti Squash

Here is another delicious squash, also known as the "Vegetable Spaghetti, Noodle Squash, Vegetable Marrow, Spaghetti Marrow" and "Squaghetti".  

In the center of this squash you will find many large seeds.  The flesh is yellow or orange and looks similar to the flesh of other squash.  The true magic happens with the squash is cooked.  The flesh now becomes spaghetti-like and forms strands.  This squash is often used as a substitute for pasta.  Bake, boil, steam or microwave.  Seeds can be roasted the same way pumpkin seeds are.
